It would be nice to be able to insert en dashes (–) by simply typing two dashes (--) in markdown like it's possible on StackExchange and with pandoc.

You can implement your own remark plugin to do it. https://docusaurus.io/docs/next/markdown-features/plugins#creating-new-rehyperemark-plugins
Just look for all --
 in text and replace with –.
It's probably too opinionated to support in our core.

I don't understand what you mean at all sorry.

Note you can build a remark plugin to implement custom md syntax if you want to, isn't this good enough?
